With Shrove Tuesday, just around the corner, Heat Holders have found three delicious recipes to make this year’s celebration one to remember.

To make perfect pancakes all you need is: 100g of plain flour, two eggs, 300ml of milk, and a pinch of salt.

  1. Mix the flour and a pinch of salt in a bowl, creating a well in the centre.
  2. Crack both the eggs in the centre, pour in around 50ml of milk and slowly whisk the flour into the mixture.
  3. Steadily pour in the remaining milk and whisk, it should be the consistency of double cream, traditionalists will tell you to cover the mixture and leave for half an hour, but this isn’t strictly necessary.
  4. Heat the frying pan to a moderate temperature and add a pinch of cooking oil.
  5. Ladle in some batter and move the mixture around until you have a thin, even layer. If the mixture begins to bubble the pan is too hot.
  6. Leave to cook for 30 seconds on each side before serving on a warm plate.

Banana and Greek Yoghurt Pancakes

For a delicious treat, slice some bananas and squeeze a lemon over the top, adding a touch of zest into the mixture. Toast some almonds before you cook the pancakes, once the pancakes are cooked add the bananas, a spoon of Greek yoghurt, and drizzle with maple syrup or honey.

Protein Pancakes

Peel, core and chop a few pears and apples, toss into a bowl with chopped figs and pomegranate seeds. Spread a teaspoon of almond butter on the pancake and layer with fruit, top with a tablespoon of Greek yoghurt, and sprinkle with honey; deliciously healthy and packed full of protein.

Butternut Squash Pancakes

Strip a cooked squash, mash with a fork and add it to the pancake recipe. As well as this, deseed and cut a chilli and a handful of rosemary, grate some parmesan; add to the mixture and cook. Top with more parmesan and serve!
